Chef Alessandro Fumagalli's cuisine celebrates a return to the origins, a rediscovery of essential, primary, regional flavours. Those flavours that the locals know very well and that tourists love to discover. His dishes express a love for an ancient culinary tradition, such as that of the lake, whose roots date back to the Middle Ages, and a care for complex, sometimes ritualistic preparation. A combination that at first glance seems simple and pure but in reality requires patience and respect for the raw materials and a thorough knowledge of preparation techniques. From the lake to the kitchen: the Chef converts memories and ingredients of his childhood into a new style of cooking to share with the rest of the world.

Missoltini (or missultin, or missulten) are a true emblem of lake cuisine. They are agoni: a small fish typical of lakes in Lombardy and Ticino.

Chef Alessandro Fumagalli
The chef considers cooking to be an art, and chefs to be artists like painters and sculptors. His work reflects the belief that the chef should use the plate as a canvas and the ingredients as colours. Hence the nickname "kitchen painter". After many years of apprenticeship, and the never-to-be-forgotten lessons of master Dario Ranza at the Villa Principe Leopoldo restaurant, Chef Fumagalli realised his dream of opening his own restaurant.

 

Dishes at the Missultin are characterised by seasonality and availability. The menu is measured and based on the culinary philosophy of the lake, without neglecting some contamination, always appreciated by the patrons and stimulating for the cooks.
