Wine & Dine at the winery begins with an aperitif, which takes place in the garden around the Feuerring. This ring of fire symbolizes the connection to the volcanic soil from which the wines are born. Before sitting at the table in the room overlooking the barrique cellar, there will be a tour of the winemaking cellar.
The 4-course menu is inspired by biodynamic principles and follows Maria Thun's calendar, which indicates the days on which the moon and planets have influence on certain parts of the plant: the fruits, flowers, leaves or roots.
The Chef uses only seasonal local or estate-produced raw materials: vegetables, herbs and flowers from the organic gardens, honey and olive oil from the Castle.
